Commonwealth Bistro Will Get You In Touch With Kentucky’s Appalachian Roots

THE WHAT

Commonwealth Bistro is a new eatery serving up recipes rooted in its Kentucky/ Appalachian heritage.

Examples: Mussels with country ham; Kentucky fried rabbit with buttermilk biscuit; and creamed collared greens to name a few

THE WHO

Chris & Tess Burns are the owners. Bryan Harris is the general manager. Burn and Harris met years ago while working for Jean-Robert de Cavel at his now-closed JeanRo Bistro.

THE WHEN

Three years ago, the Burns’ received a $150,000 loan for the restaurant from the city. But as is the case in most good things, they take time. The restaurant officially opened at the end of October 2016.

THE WHY

The atmosphere is very community-oriented. It’s a come-as-you-are type of place. But whether you show up in work attire or more casual street clothes, the food (& drinks) are what will keep you coming back.

Top picks: Try the Spotted Bass with the Limestone Lettuce Salad for dinner. For happy hour, get The Duveneck. And though we didn’t get a chance to try brunch yet, I can only imagine how divine that must be. If this place is serving up biscuits for dinner, just imagine how biscuits, hash browns, and bacon will be for brunch?? I mean, come on now...

Commonwealth Bistro is open Tuesday through Friday (530pm to 10pm); Saturday (10am to 2pm and 530pm to 10pm); and Sunday (10am to 2pm and 530pm to 830pm).
